My First WIAW!

Hello friends! I’m so excited about my first What I Ate Wednesday post! Thanks a million to Jenn at Peas and Crayons  for hosting!

Breakfast

I woke up this morning really flustered and concerned because my shoulder and knuckles were really swollen and painful from the big fall I took on Sunday. I was nervous that it might be getting infected, so I called the doctor right when I got up to see if I could make an appointment. They were able to get me in, but I had to leave in about five minutes to get there on time… SO, I grabbed some almonds and a handful of raisins just to get something in my stomach.

 Snacks

After taking a look at my injuries, the doctor gave me an antibiotic cream they use for burn victims, wrapped my arm back up and sent me on my way. When we got home, I decided I needed something delicious, so Ben and I stopped at Whole Foods and got stuff to make an All Fruit Smoothie. This was a lovely little mixture of OJ, frozen mixed berries, a huge banana, and a lot of ice.

The smoothie turned out awesome, but I’m ready to start experimenting with more filling smoothie ingredients. The whole wide smoothie world is open to me… I feel like I have a lot of work to do!

Since I was home today instead of at work downtown, I had easy access to the kitchen, which was sort of a problem. I ended up snacking all day long. First, I had a banana and some blueberries with fresh ground almond butter. <3

Later, I had this Key Lime Pie Larabar, which I didn’t anticipate liking. I am typically pretty averse to anything with coconut in it, but I actually ended up LOVING the flavor of this bar. I will definitely buy this kind again! So yummy. I adore Larabars because they have zero sugar in them — they are sweetened with dates or other natural sources of sweetness. LOVE this.

I also had some Garden of Eatin’ chips dipped in some refried black beans… but I forgot to snap a photo!

Dinner

For dinner tonight, I made Mediterranean lentils and rice… a really delicious meal! And quite healthy as well… seriously just lentils, rice, onion, cumin+cinnamon+cayenne, and tomatoes.

 

“Dessert”

After dinner, Ben had some friends over, and they ordered Mexican food. He got me a veggie taco without me even asking for it. Such a good boy. :) And quite a tasty “dessert”! Two warm corn tortillas filled with rice, beans, pico de gallo, LOTS of cilantro, and avocado. A perfect after dinner snack.
